This is a Piano. It is made from wood and painted a very shiny black. Some would call it, "Piano Black." Pianos are designed to look good on stage under lighting and catch your eye. However it is a fingerprint magnet and must be cleaned and polished regularly.
This is a car interior. A place where people sit and touch things, this usually results in fingerprints being on the shiny black plastic. A car often has bright sunlight shining into it. Bright sunlight tends to reflect off of really shiny black surfaces and into people's eyes.
Please stop putting shiny black surfaces into them.

I drive through some woods on my way home. the flickering sunlight through the tress off the top of my dashboard is enough to give someone a seizure.

I think it's because no one who designs the interior of the car actually sees it driving in real conditions before they finish it.

Or even bothers to think about driving it. They just sit in there in a clean white room, at their clean white macs and dream of black.

Piano Black> Wood Grain, its not too hard to keep a microfiber towel in your car and wipe it down everyday.

Still doesn't help with the whole reflecting the light part...

That is beautiful. Don't mind a little gloss either, just nothing so excessive as to make the real thing look like plastic, which totally defeats the purpose.
